Sheet pan Sesame Chicken and Broccoli

I love a good sheet pan meal. Less clean up and easy to cook. I made this and everyone loved it! We will be keeping this in rotation! I used GF soy sauce since my boys are GF. I halfed the recipe the first time I made it for 3 people and it went really fast. I would definitely make the full recipe, especially if more than 3 people are eating it!

Ingredients:

2 lbs boneless, skinless chicken thighs cut into bite size pieces

3 Tbsp Sesame Oil

3 Tbsp Soy Sauce (we used GF soy sauce)

2 Tbsp Gochujang

2 bags of Broccoli Florets

2 Red Bell Peppers cut into bite size pieces

2 Tbsp Honey

1 Tbsp Sesame Seeds

2 Bags microwaveable rice

Instructions:

  1. Preheat oven to 425 degrees. Stir together oil, soy sauce, and gochujang in a bowl. Add chicken, broccoli, and bell peppers; toss. Divide between 2 large rimmed backing sheets; spread into even layers
  2. Bake 20-25 minutes or until chicken is cooked and vegetables are tender.
  3. Drizzle with honey and sprinkle with sesame seeds.
  4. Follow directions on bag for rice.
